Zemedakia of Evia

  • Evia sour cheese
    Handmade Evia sour cheese with semi-dried tomatoes, fresh cherry tomatoes, herbs and lountza from Psachna.
  • Fried mushrooms
    Crispy oyster, shiitake and lentinula mushrooms with garum mayonnaise.
  • Squid croquettes
    Croquettes made with squid tentacles, served with a lemon, garlic and basil aioli.
  • Anchovy omelette
    A characteristic Evia recipe with anchovies at its heart.
  • Evia orange sausage
    Fried orange-flavoured sausage with spicy orange cheese dip.
  • Evia dessert
    Crisp baklava, almond cream, roasted and raw almonds, fresh Kymi fig and Kymi fig-honey glaze.

The people behind Evia's Road of the Distillate

The Distillate Route is more than a Zeme idea. It is a journey made possible by people who open their doors to us and share their products, recipes and memories.

From Chalkida and Psachna to Artaki and Kymi, we encountered a place with a distinctive character: fennel and anise, cheeses, naturally cured meats, mushrooms, seafood flavours and the celebrated Kymi fig.

We thank the producers and people of Evia who helped us bring this experience back to Thessaloniki.
