The Set Menu of the Northern Aegean

Zemedakia from the Northern Aegean

  • “Rip me like a sardine” (Lesvos) – Sardines with Kalloni salt, thyme, and lemon.
  • Shrimp pie (Chios) – Sardines with Kalloni salt, thyme, and lemon.
  • Melichloro cheese from Lemnos with Chios pastelaria – Breaded melichloro with a marmalade made from Chios pastelaria (stuffed dried figs).
  • Sougania (Lesvos) – Onion rolls stuffed with minced meat, rice, and spices, finished with an egg-lemon sauce.
  • Musky octopus with olives and tomato (Lesvos) – Octopus with tomato, olives, and capers.
  • Dessert “Masourakia” with a twist (Chios) – Handmade masourakia with white chocolate namelaka and citrus aromas.
  • Fidani Mastic Liqueur by Stoupakis (Chios) – An aromatic and refreshing finale.

  • Ptaria – Matsistoi Meatballs (Lesvos) – Hand-chopped mixed meat meatballs with herbs and a Lesvos feta cheese cream.

The Distillates of the Northern Aegean

  • Smyrnio Ouzo (Lesbos, 50 ml): Classic ouzo of Mytilene with aniseed and herbs of Lesvos.
  • Tsipouro Mavro Rodo by Stoupakis (Chios, 50 ml):
    Distilled tsipouro with rich aromas of Muscat Hamburg, smooth taste, and a long finish.
  • Fidani Mastic Liqueur by Stoupakis (Chios): Sweet and refreshing, with a clean mastic character.

Notes:

  • The spirits were included in the price of the Route of the Distillate.
  • The set menu was served as a unified experience, and the dishes from the main set could not be ordered individually.
